Ukrainian culture is becoming increasingly popular. In different parts of the world, people are learning more and more about the people, life, traditions and, of course, the cuisine of Ukraine. The Ukrainian cuisine restaurant Borsch in Latvia was opened by Ukrainian women who evacuated after the start of the full-scale invasion. The most popular dishes are varenyky, syrnyky, and borsch. The restaurant is gradually gaining popularity, with Ukrainians, residents of Riga, and even employees of the Latvian Ministry of Defense visiting it. In addition to treating guests, Ukrainian women are also actively helping the Armed Forces.
"This is not an ordinary coffee shop. This is a dinner with Ukrainian women. A dinner that warms the stomach and heart. A dinner that creates work, gives you a chance to regain strength and believe in goodness again. Another establishment opened by Ukrainians who were forced to move abroad at the beginning of the war. The restaurant opened its doors on August 31. It is run by chef Yuriy Kovryzhenko. Mriya's menu consists of 24 dishes, including traditional Ukrainian dishes and the chef's own specialties: borsch, Kyiv cutlet, pickles and vinaigrette with crayfish necks, stuffed cabbage in zucchini flowers, duck breast with apple tart. The restaurant operates in a neo-bistro format with haute cuisine, but there is no excessive pathos or luxury.

Ukrainian hata, New Jersey, USA
Ukrainian hata is a corner with Ukrainian dishes on the food court of the Hudson Green Market shopping center in New Jersey. Among the restaurant's guests are Ukrainians, who sometimes even come from neighboring states to try their favorite dishes, and Americans who want to try something new. The most popular dishes are borsch and dumplings. The restaurant's team consists of Ukrainians.

Smachnoho, Tokyo, Japan
The first Ukrainian restaurant in Japan, Smachnoho, was opened in September 2022. The team of the restaurant is made up of Ukrainians who evacuated to Japan, and the owner is a Japanese artist and actress who knew almost nothing about Ukrainian cuisine before the war in Ukraine. The menu includes borsch, buckwheat porridge, cabbage rolls, and Kyiv-style cutlets.

Salo restaurant, Shanghai, China
Salo Restaurant was opened by a Ukrainian in 2008, a restaurant with a Ukrainian flavor. The restaurant's menu is admired by locals and brings Ukrainians back to the comfort of home. Borsch and cutlets, mashed potatoes and dumplings, and of course, lard. There are different types of lard here - salted, smoked, baked.

The Borsch, Prague, Czech Republic
The owners of the restaurant, Alex Martynov and Natalia Bas, a couple from Kropyvnytskyi, after moving to the Czech Republic, first organized borsch parties for friends, which later grew into a large restaurant, The Borsch, which opened in September 2021. The restaurant's menu offers 3-4 types of first courses every day. Other popular items include Kyiv cutlet, stuffed cabbage, dumplings with cherries, pancakes, cheesecakes, and pancakes.
After February 24, The Borsch ceased to be just a place where Ukrainians and Czechs from the neighborhood dine. Now it helps refugees find housing and work, and provides counseling on various issues.

The first Ukrainian restaurant in the UAE was opened on November 25 by the well-known Kyiv-based company Moderza. For example, Ukrainian borsch is cooked with beetroot kvass and ribs burnt on the fire.
The restaurant's menu also includes banosh, coconut lard, wood-fired bread, and homemade liqueurs. The interior is very atmospheric and Ukrainian music is played.

Chornomorka establishments in Romania and Moldova
Olga Kopylova, the head of the Chornomorka company (Chornomorka, Anchovy, Goats and Matrosy), has been developing her network for many years. In Ukraine, the restaurants operate in many cities, but now the company is actively moving into the European market. Since the beginning of the full-scale invasion, two Chornomorka restaurants have been opened in Romania and Moldova. The concept of the restaurants is fish and seafood. Therefore, the menu is not much different from what Ukrainians are used to, with some local dishes added to it. Soon, Chornomorka will also open in Warsaw and Lithuania.
